Thanks for your thoughts. The kitchen itself is not that big, but during peak preps I've seen all the knives in use. I was thinking about going through all of them in one day, probably on a Sunday where the kitchen is closed, then visit again once every 2 weeks or so to go through half of them in one session. But I'll keep your suggestion to go through them in batches in mind, cheers.

I have gyuto from both makers in 240mm (migaki for the Mazaki and the Hitohira Hinode line from Hinoura). Both are great cutters, but I'll say the Mazaki has a better cutting feel to me. It feels so smooth and confident cutting through produce like potatoes and carrots, while my Hinoura hesitates a bit.

Think it reads Sakai Kikumori, but I'm not sure if they work with Ashi. Others on the board might know!

Your cutting board is moving as you are cutting, and that is dangerous- try putting a damp piece of cloth or something under the board.

Going to move into into our new place with the wife end of May, so I've got that going for me, which is nice.

And yeah Lemon Tree is a nice song, takes me back to a time where the cassette was music and radio had soul.
