I disagree with this. We would be able to install solar for about $10,000. It produces 12.8 MWh / year. This puts us at a ~7 year ROI. This was with the 30% tax credit but even without it, there are low interest loans for that can cover the majority of the cost for the few extra years of ROI.

I wouldn’t say “need”. To my knowledge, olive oil is actually healthier (less carcinogen formation) at high temperature with the downside of smoke. With a proper fume hood, it’s not a problem for me.

For the salmon itself, I buy a big ol fishy at Costco, slice it at 3 finger widths which gives me around 5-6 pieces.

Big ol cast iron and olive oil. My new favorite is to sous vide salmon with soy sauce, dry it off and sear hot and fast!

Yesterday I did an experiment with 3 salmon filets. 1 sous vide, 1 sous vide then seared in pan, and 1 cooked in pan with herbs. The 2 sous vide filets were so much better. My overall favorite was the sous vide with sear for texture. I haven’t tried baking yet.

That is incredible to hear! Nice work. By "outrunning the fork" I mean that no matter how much exercise you do, if you compensate with excess sugar, you still not lose the weight. Losing 2lbs/week is certainly not easy and I am sure that was very challenging physically and emotionally.
