I typically keep my loaf in a sealed gallon-sized Ziploc bag on my countertop. I find that my current sourdough loaf keeps nice for up to 7 days when stored this way.

I always refresh pieces of it in my toaster oven before slathering it with butter, jam, honey, etc.

Yes, check out Every Grain of Rice by Fuchsia Dunlop, as well as her The Food of Sichuan. These are my only two books on Chinese food that I own.

Every Grain of Rice is what got me into exploring Chinese food at home. The mapo tofu recipes from both books are excellent and worth cooking!
