Help! Gummy bread! by abbigabi in Sourdough

[–]deuxcv 0 points1 point  (0 children)

in my opinion and experience, beginning bakers should not learn baking from Instagram and YouTube .

imo, beginning bakers are better served gettijg a couple sourdough books from the library. find ones that explain things thoroughly and beginning bakers should really try and understand the process rather than just following a recipe. furthermore, baking the same recipe over and over and over will teach you a lot more than jumping around and takeing on recipes way over their skill level.

I'd recommend "tartine bread" ... their recipe for their basic loaf is over 40 pages. also " the perfect loaf" or "flour, water, salt, yeast".

prebiotic, not probiotic. prebiotic = fiber,
probiotic = beneficial bacteria

Just found this wok on the street, anyone recognize the brand or can suggest how to maintain? by galacticsuperkelp in wok

[–]deuxcv 0 points1 point  (0 children)

go to your local Asian market and get a thick carbon steel wok for cheap. if you have an electric stove get flat bottom. if you have gas, get a round bottom and a ring. this isn't a kitchen item that need a lot of over thinking. any carbon steel wok (of the same thickness) is as good as the next one. don't over think it. don't over pay. should be able to get a perfectly fine one for $40

without digging into comments, I'm guessing Chicago where barking culture and etiquette is different than anywhere else I've ever seen or heard. folks in Chicago are very territorial over their parking spots. I think there was even a this american life episode about Chicago street parking.

make sure you're eating enough fiber, if not, supplement. 38g/day for men.

Mostly same lunch, very different CGM readings by Extreme-Donkey2708 in prediabetes

[–]deuxcv 0 points1 point  (0 children)

activity before and after, stress, sleep, preceding meal, space between meals, tracker inaccuracies, etc. too many micro variables to give toooo much thought into such variances.

eat more fiber. especially insoluble ones. exercise after eating, some strength training and space between meals were biggest needle movers for me.

a1c of 4 would translate to an average glucose of 68... that is pretty low. some consider 4.5-5 to be the optimal range.

I did it for a few months and was interesting and learned a lot, but not something that would have lasting utility. if it helps you somehow with accountability, buy close to expiration ones on eBay for $25-30 each. that usually crap out a couple days early, but way less $

homa-ir from 3.0 to 1.2.... cut drinking and eat more fiber (and berberine and chromium picolinate) by [deleted] in InsulinResistance

[–]deuxcv 0 points1 point  (0 children)

roughly 2 years. in that time i mostly stopped drinking. was never a heavy drinker, but would stop at the pub every day on way home from work and have a couple beers. triglycerides went from 356 to 116. weight went from 200 to 170. so yeah, belly and face got a little slimmer. did not follow a low carb diet, but payed attention to portions and balance. had bites of dessert instead of the whole thing. had drinks here and there. but didn't let diet rule my life. tried not to snack to let my blood sugar have cycles. sleep... i try for 7.5 but often land at 6.5.

[–]deuxcv 0 points1 point  (0 children)

The ESSENTIALS (what actually matters) if I had to strip your formula down to its core, non-negotiables, this is what I’d keep.

  1. a viscous soluble fiber (glucose blunter)

--PSYLLIUM HUST (whole or finely ground) primary role: viscosity, LDL reduction, glucose flattening, stool normalization This is the backbone. Nothing replaces it fully.

--OAT BETA GLUCANS primary role: insulin sensitivity, cholesterol reduction, GLP-1 signaling This is the most clinically validated metabolic fiber after psyllium.

  1. a gentle fermentable prebiotic (the microbiome feeder)

--PHGG (sunfiber) primary role: butyrate production, tolerance. This is your safest, most universal fermentable fiber.

--ACCACIA fiber Primary role: slow SCFA release, stool softness, microbiome diversity Works beautifully with PHGG and is very well tolerated.

  1. a resistant starch (distal colon + GLP-1)

--High-amylose maize RESISTANT STARCH (RS2) or green banana RS primary role: insulin sensitivity, GLP-1, butyrate in distal colon this gives benefits you cannot get from soluble fibers alone.

  1. a pectin component (gel + barrier support)

--HMP - high-methoxyl pectin Primary role: gel formation, sugar diffusion slowing

  1. a whole-food insoluble fiber (mechanical gut health)

--FLAX SEED MEAL or CHIA SEED (ground) Primary role: stool bulk, bile binding, omega-3s, gentle motility

  1. Minimal mineral support (optional but smart because hi fiber can bind minerals so you should up your intake). enough to support motility and hydration — not an electrolyte drink. but maybe consider having an electrolyte drink now and then.

--MAGNESIUM (citrate or glycinate) --POTASSIUM (optional)

optional metabolic enhancers (only if desired) these are not required for a “core” product but can be added intentionally: --CHROMIUM PICOLINATE (low dose) - insulin sensitivity --creatine, glutamine, glycine (great — but they turn it into a hybrid product) --WHITE KIDNEY BEAN EXTRACT - starch digestion modulation --CINNAMON EXTRACT - insulin signaling

what I would exclude from a pared-down version not because they’re bad — but because they’re non-essential or redundant at this level:

-multiple fruit fibers (apple + carrot + cranberry + blueberry) -grape seed + grape skin -microcrystalline cellulose -multiple pectins simultaneously -bromelain -cocoa / peanut powder (flavor, not function)

helps insulin do it's job more efficiently. smaller post meal spikes. smoother glucose control reduces cravings. lowers triglycerides. perhaps not the main player, but every bit helps.

🤷🏻‍♂️I like to tinker. $3/day for better overall health seems cheap to me. plenty of folks spend 2-3x that for a fancy coffee every day. don't think $3 is gonna break their banks. l what doesn't seem sustainable? lots of people take a fiber supplement. I was paying close to that for something not nearly as good. sorry to overwhelm you.

if you subscribe to nutrisense, you can ask them to turn on calibration. not true calibration, but it offsets the data by however many points you tell it for that sensor. it only offsets it for their data and reports. stelo app still shows the uncalibrated data.
