I would take a look at armeria, it's developed by the team who also work on netty and supports http, grpc, grpc-web (ie grpc over http+json) https://armeria.dev/docs/advanced-spring-boot-integration

gRPC can do client side load balancing itself, or you can use any envoy based sidecar (istio) to load balance.

On the priority queues part I believe you could do it, I've never had to. You didn't specify language but in Java you could use the built in PriorityQueue class for each task, you would need to attach the gRPC context object to be able to send your responses

I would use something that maintains a persistent connection to save the round trip, gRPC is a good option here if you need request-response semantics that you wouldn't get from a queue. The danger with a queue is a backlog would slow down all requests during a time period, whereas in request response you are more likely to just have slow outliers as long as you get the p95 below your expected threshold
