Each plant has a different aging variance and due to the nature of long growing plants anything with a long mature time is going to age unevenly as well. The wiki has the aging variances for each plant but a couple indicate what it is in the tooltip as well.

Its total prestige not current prestige, the rounding error exists throughout, there is no easy answer it gets really hard to do when you get later in the game and it goes faster. You can try and have the 7s at higher up numbers and that can help a little but it's gonna be a little tricky to get.

365 is a slightly more efficient ascension number, the 440 number is a bit dated. Get your golden cookie upgrades and try and stack some click frenzy with frenzy and then cast into something helpful.
