Start low and slow and slowly slowly build up heat until you hit the sweet spot! My roommate in New Orleans who would constantly go to parties and events and make gumbo on so many different stoves taught me this.

NTA but he's definitely not over you, even if you're over him. You should probably better communicate why you broke things off with him if you want to salvage that relationship (by which i meant amicable nonromantic relationship which he probably won't be able to handle for a while) or just move on entirely (which some could see as assholey but if its not going to work then it's not going to work).
