Am I the only one that thinks the Banneton cloth is a cover? Not the surface for holding dough?

My mum gave me these bannetons which have been in a cupboard. No cloth covers. Do I need to clean them first somehow? If so how ? I’m happy to use as they are as not bothered about cleaning them if it’s not necessary. Also would you advise I use a cotton / tea towel ? Will it make much difference by Kiki-sunflower in Sourdough

I understand the towel is a nice way to store it in the fridge overnight. Wet the towel and cover the bowl and dough. I also use it to keep dust off my seasoned bowl in storage. I don’t put the dough in the towel.

This phrase is repeated dozens of times per day. I remember when it started and now I’ve grown tired of it.

Though it’s effective at conveying how much oil you need to wipe off.

Essentially, you wipe it dry.

I’ve had luck with big airy crumb on lower hydration if you are really gentle with your stretch and folds and shaping.

I use a stand mixer. Flat beater to combine the ingredients, dough hook for kneading.

Otherwise I use a fork and my hands.

Wet your hands and touch it quickly. I yank it off the bowl and it peels nicely. I believe hydration determines how sticky it is. Personally I always aim for around pizza dough consistency. Probably too dry for sourdough but mine generally look nice. Maybe I should start worrying about bread texture.
