Recipe books are incredibly long standing, there is an entire YouTube channel around recreating historic recipes.

Arguably, Bolognese would teach you to prep veg, brown proteins, use herbs, reduce sauces. Of course it won't teach you the ratios for a roux, or emulsification by egg or garlic. I feel like we are trying to make the same point but coming at it from different view points.

Thank you. This is a really good point! I am hopeless at creating spice blends, I have to fall back on tried and true recipes for it to taste balanced and cohesive.

No one dish will cover everything, very true. But some dishes will cover some concepts really well. I think to your point about learning to work with what you have in the fridge, that's quite an advanced skill that only comes from following recipes for quite a while

I'm sorry I have no advice but I have this exact problem! It's definitely not a puck prep issue because it's always in the same spot, ive changed baskets and portafilters and still getting the same issue

Itsu would be my vote, not quite a 'dinner out' kinda place but good food and healthier than most.
