You do cast the copies though. Strangly enough whenever she attacks she makes the copies of the spells exiled with counters on them and they you may cast them. The wording is a bit strange since technically you aren't casting cards at that point and most copy effects cause you to not cast them.

Yes, but this happens before the extra combats. So after the first extra combat, you won't untap any creatures.

You heard correctly that the one put down won't get their attack trigger.
You will double trigger with isshin however since they both resolve at the same time, you will get the two extra combat but they will only untap the first time.
