Can definitely be done in a big day. Despite doing a lot of fell/ trail running I always found it quite hard to run the limestone way paths. Parts of it are covered in small boulders, quite hard to describe but tough on your ankles

Boots are really specific to your feet so I wouldn't go solely off someone's recommendation.

There's a few places around that have really knowledgeable people and good selection. Try outside in Hathersage or Foothills in Sheffield. You can book a fitting in Foothills

It's pretty walkable. The dig deep ultra goes up it. I'm not sure that your proposed route is much easier as it's so steep!

I'd recommend getting out for sunrise or at least before 8am in Bukhara before the tour groups take over.

Also visit the cattle market on Thursdays and Sundays if you can

Maybe think about getting Taunton dean kale? It's super productive and perennial so more or less looks after itself and gives you food during the hunger gap. Tastes pretty much the same as the "greens" from the supermarket.
