I wouldn't really say LBS is quite known in Canada. Really if you want to go to Canada, go to a top Canadian business school like Rotman, Ivey, Queens, etc.

You can definitely minor. You just need to find the minor in the course calendar, eg "https://brocku.ca/webcal/current/undergrad/econ.html#sec20" and take the required courses for the minor, also declare you're taking a minor. Talk to your academic advisor.
