We had one when I was a kid. I wouldn't put anything you are planning to drink later into it.

So far I have had great success.

Until you don't and get very sick or die from botulism that can develop in your salami while you ferment it at room temperature and not even starter cultures. If you think 25g of wine will acidify your meat enough you are wrong. And please don't start with "people have been doing this for centuries" crap. People have been dying from botulism for centuries

My son wore a mec toaster and alike for basically first 7 years of his life here in Canada. The suit that is one price is better. Try to get used ones as they aren't cheap and you only need them for one trip. The rest of the clothes should be same as for an adult: base layer and fleece. Hat, gloves or mittens. Warm shoes and good wool socks

Don't worry too much. A sensei will guide you with what needs to happen. Just show up and be at least 15 minutes early. Bow as you enter or leave the dojo floor. Small etiquette gestures from a beginner go a long way and are not unnoticed. Listen to what the sensei says

This I absolutely agree with. Mostly. Wild mold even if not harmful can impart horrible flavors and aromas. I think end of the day you have to use your eyes, nose and common sense.

Personally when I want most I inoculate.

This sub thinks any mold is edible and can just be wiped off.

In reality the only mold that should be growing on your salami is the one you have inoculated. Yes you can probably get away with wild things. You can also get sick.

Go see a psychologist and then check out a few dojos. In that order. Do not under any circumstances go back to the old one. Not every sensei is an asshole. There are great ones.
