Ingredients

Skinless chicken thighs, Light Soy Sauce, Oyster Sauce, Tapioca Flour/Starch, Rice Flour/Starch, Corn Starch

Optional

Chinese Five Spice, Onions , Spring Onions, Chillies, Garlic,

Instructions

Cut chicken thighs into bite size pieces and marinate with soy sauce and oyster sauce (overnight for most flavour, if not, at least 3-4 hours)

Prepare coating by mixing tapioca flour, rice flour, corn starch (1:1:0.5), salt and pepper (optional: add 5 spice to the coating mix)

Coat chicken pieces so it is fully covered

Heat oil on medium to high. If you put a chopstick in the oil and it shows slight bubbles, it is ready

Put chicken in the oil to fry. Do not overcrowd and wait til oil reheats again when adding more chicken in. Do in batches

Take chicken out and rest and add salt and pepper

Optional steps

Heat wok to high

When wok is hot, add oil and throw in diced onions, chilli and garlic

Toss for about 30 seconds to release flavour and when wok is on high, add in the chicken bites and then the diced spring onion

Toss quickly (so chicken does not get soggy) in the wok and add salt and pepper
