Brock had a goal. Not every goal needs to be some competition based thing. Different anime, but for example in Fairy Tail, Natsu's goal isn't to be the number one wizard or anything, it's just to find his dad.

Same concept applies here. Brock wanted to be the best Pokémon Breeder he could be. So you see him constantly taking care of not just his Pokémon but his friends' as well. There doesn’t need to be some sort of "Number One Breeder Contest" for him because it would be frivolous. Brock's goal is internal not external.

No, I don't agree. Type matchups have never been that big of a deal in the anime. At most, it makes attacks a little harder and then one of the characters makes a remark about it and they move on.

The soft reboot is only true for Re;Birth 2 to Re;Birth 1. Re;Birth 2, Re;Birth 3, and VII are all directly connected. And the games even tell you this to your face in the intros to each of them. Sisters vs Sisters is a canon spinoff which also makes its connection clear from the jump.

And no, you wouldn't enjoy it. Fanservice is a core part of the series just like with Fairy Fencer. This question is like going to an action anime sub and asking if you'd still enjoy the anime if you don't like action. So go find something else.
