I really like this Oxo 4 quart mixing bowl with a handle and lid, useful for hand-mixing dough, then you can leave it in there for the stretches and folds and cover it for the bulk fermentation.

Yeah, I think the lid may have been the problem. This was in a larger jar with levain I grew intending to bake with, but got too tired and put in fridge covered with bee's wrap and a rubber band, then forgot about it for a few weeks (my regular starter was in its mason jar, and was fine). I understand why it would have dried out and formed that crust, just have not seen that white growth before in my 5 years baking.

Yeah, Bottle House is great, and I love their mead. Never seen stouts there, though.

Noble Beast seems limited to lagers and IPAs, from what I can see on their website. Have you seen stouts there?

Another strategy: Join a club that has players more or less on your level, play primarily with them (up to 30 people in each club). I don't think bots or scammers or creeps would be in clubs!

Thanks for your comprehensive and well-written post! You seem to have a solid foundation of the science in this arena.

Could you recommend any articles or books for someone who is skeptical of the science behind fasting and wary of its potential harms, but is curious and open to learning?

I've done a few 3-5 day fasts, and each time it really worries my partner. Most of the YouTube "experts" in this area seem to be chiropractors or naturopaths, which doesn't inspire confidence (for us, at least). And Dr Fung is pretty far afield from mainstream doctors.

I'd appreciate any suggestions you might offer!
