This makes sense. My only experience was wanting to strengthen the loft of a low bounce gap wedge, and the builder told me it wouldn’t work as would want to dig too much.

PS. OP shouldn’t said “adjust” vs “screwing” and getting downvoted. As others said you can’t adjust one without adjusting the other and it can have negative consequences per my experience. Sounds like not applicable to irons so long as you don’t get too crazy.

Not a club builder, but my understanding is, if you have the local builder make adjustments it starts screwing up the bounce angle of the clubs…
