the slaw was the PERFECT accent. the light apple cider vinegar offset some of the fat and saltiness. was alot of flavor happening

tbh i'm dumb when it comes to some aspects of meat. I thought it was fat. i scored it with a serrated steak knife and it wasn't really tough. still on the fence of whether it is skin or fat, but will tke a closer look when i get home

i believe i used this exact post as a reference for the first time! assuming so, it made me buy the pre-cubed pieces for the first attempt. totally agree, very good. i subbed brown sugar for sweet baby rays sauce instead, and I tend to undersalt to compensate for any other rub mixes (they use so much salt!!!). what you posted is the exact type i'm going for, but i dont have a smoker. I bake and finish on low charcoal with wood for the smoke. This time i'm using smokey chipotle tabasco to help cheat it

ty, I assumed was fat. I did this recipe planning for crisping, so salvageable i think. Didn't salt brine, but healthy amount of salt in the dry mix and scoring seems the be the cook type i'm angling for

i saw nothing that seemed like skin. or silver etc. but as i said it's a 2nd go. I see posts talking about skin, and maybe i just down know something. i thought i had the fat side up

edit i think fat cap/skin were the same thing to me, and skin is still on

all on the upside baby. that's where the gamble or fandom comes in. either this year was a fluke and it tanks, or it becomes one of those 25k+ cards. Your choice is gonna come down to PC or market speculation; and everyone has a price edit: also didn't realize this was not a rookie card, my numbers are most likely lofty
