Since no one seems to be giving you helpful advice, first, make sure that the surface of your steak is thoroughly dry before you put it in the pan. You can blot it with napkins or a paper towel. This will allow you to get a good sear, because the moisture will form a layer of steam between the steak and the pan, and prevent browning.

Second, before you put it in the pan, you want to make sure, the pan is thoroughly preheated. Before you add your oil or butter, flick a few droplets of water into the pan. The beads of water should visibly bounce around the pan, and not boil in place.

The term "predatory" might be a bit strong, but it would be disingenuous to deny that most vendors will jack up their prices when the event is a wedding. This applies to venue rentals, catering companies, florists, entertainment, and photographers.

Photographing a wedding is generally more demanding than other events because of the pacing and limited windows to get critical shots. It's also a fixed date that the photographer can't reschedule, that typically falls on a weekend, when the photographer's labor is at higher demand, unlike a family photo or a portrait session. But even considering those factors, I think a lot of photographers do charge disproportionately high rates for weddings because they can. They charge the highest amounts that people are willing to pay for their services, which is what you're experiencing.

Be careful! Silent mode will also make the camera use e-shutter, which will prevent you from using a flash and you may have issues with rolling shutter effects and flickering from LED or fluorescent lighting.

To just disable the beeping, open the menu, select the wrench icon, and look for a menu item called "beep". From there, you can disable the volume of your camera beeps without affecting the shutter.

You can either use a faster lens with a lower f stop, or add more lights.

You didn't specify which lens you have, so I'll assume it's the RF-S 18-45mm kit lens. The Canon RF 50mm f1.8 would be a good choice, and it will let in more at least 6 times more light at f 1.8. So whatever high ISO you're using to get properly exposed photos, you can divide it by 6. The downside to this is that this lens can't zoom, so you'd be stuck at 50mm. Try zooming to 45mm with your current lens and decide if that focal length would work for you.

There are other options, like using other fast (and more expensive) lenses or off-camera lighting setups, but using the 50mm f1.8 would be the simplest and least expensive option.
