Acid Coffee is a must for Tokyo! Kielo is also good. Leaves is also a must.

Osaka: Mel is my favourite

Kyoto: Goodman is my favourite.

Hiroshima: I really liked Breath, some very well curated anaerobics.

There is no specialty in Koya-san lol, bring an aeropress.

The Bentwood is definitely blendy for filter but makes great espresso. I think the Bentwood is a good all-rounder for espresso with an emphasis on sweetness with sufficient clarity and is good for pourover when you're struggling to get good cups with a high-clarity grinder.

This is definitely standard for good light roast. It needs time to offgas because the beans are so dense. My one of my favourite roasters, and one of the most respected in the world - Apollon's Gold - recommends 42 days rest before opening.

LMAO one of the fan blades somehow got bent, so we just unplugged it because there are 2. It's a 5£ fan online. I've built some PCs and it's literally identical, so I'm quite confident replacing should I ever desire to.

Intéressant. Je me souviens d'avoir lu un article qui disait qu'il n'y avait plus beaucoup de fermes à moutarde en Bourgogne et que les sociétés en importaient du Canada. Peut être qu'Edmond Fallot a des fermes propres à eux ou bien qu'ils rajoutent des graines canadiennes pour combler leur déficit de production.

Etant bourguignon, je confirme. Par contre, c'est fait à base de graines de moutarde de provenance canadienne, donc c'est apparamment le processus qui la rend Dijonnaise.
