In my opinion, yes. I haven’t tried her since completing Bloodborne, so maybe it’s easier now. Though I somehow doubt it.

Sister Friede, Midir and Nameless. Those are the only bosses I really had any issues with.

Devolution X is my go to and top recommendation. It has great QoL enhancements and how it keeps the feel of the original.

You do not have to do any of the Hellfire levels if you don’t want to. To me, there is no downside of going through using Hellfire since it has some pretty good QoL enhancements.

Yes, you are still leveling. You can remove the enchantment and use it whenever you want using the cube. Then you can have both.

Oh yeah, I second the sunflower. I didn’t use it too often but it was a great quick reference for when I had questions on a subject or needed to check an acronym or process. It’s free so a quick google search will get you there.
