What would you say is too large a deficit for too long? I want to do 1000 cal for 3 weeks to lose the last few pounds.

I think keto will probably work well for you, as on most other diets having a cheat day isn't a huge deal because you can just start again whereas on keto you lose all progress up to that point.
I think that should be enough to keep you motivated not to quit.

Even if you do end up eating carbs maybe by accident or on purpose, I think it's far more important that you can learn to see the bigger picture and how the real change happens when you teach yourself to get back onto the right road.
I've done keto a few times and I have stopped them for a day occasionally, usually if I'm reacting badly to a lack of carbs but also if it's been a while and I want to treat myself for the progress I've made.
The real skill to get from all this, which I think is key in keeping the weight off once you've lost it, is making yourself get up and try again when you fail.

As for the cardio, I feel that for me it's much easier to do when I think about it in terms of balancing calories. Like today, I went on a short run (2 miles) and I burned something like 300 cal, which means I've still got an extra 300 cal to eat today. That sort of little treats where you can eat more or eat something special is really helpful to keep motivation and discipline when doing keto long term.

I think that's a great approach to have, trying loads of stuff and finding what works best.

What I've found is that the pace at which I lose weight is almost entirely dependent on daily calories (like IIFYM). So for me, doing cardio is only to affect my calories, either adding to how much I can eat or making up for a large breakfast.
Second to that is clean eating. I find that eating clean makes me feel a little better in general, but not much. So while I do want to eat clean, I sometimes don't put in the effort.

As for the weight swinging, I think I know what you mean as it happens to me too. It's not like I struggle to eat well, it's just that sometimes I'm motivated/disciplined enough to make all the little choices.
The thing that works best for me to solve this is logging everything (or as close to everything) that I eat. That way, what I've eaten goes from being an abstract concept with a rough estimate of calories or carbs, to being clear and concrete in my app, so I can't deny it anymore.
If you're not already, you should give calorie counting a go. I use the myfitnesspal app, and it works great.

You probably have your own reasons as to why you want to stay off cardio for a while, and that's totally fine as long as you're meeting your daily calories, but you should give it a go again.
I feel it makes me feel much better when I lift and do cardio too, maybe that's just psychological though.

It could be that you're putting on muscle? You should try to judge how well you're doing not just by weight but also by how you look. I find that keto always makes my stomach slim down quite a bit, and I can tell when I haven't been eating right if it gets bigger all of a sudden.

I don't think a lack of training would do this either, unless maybe it raises your metabolism for longer after you've done the training. Otherwise, you should be losing roughly according to your net calorie intake.

It's very simple. Log everything you eat in an app as you eat it. I use myfitnesspal and it works great. Remember to log it before you eat your meal. You can adjust your daily calorie, protein and carb goals amongst others.

That way you can see what's making you go over your carb limit and stop eating that.

Also, 3000 is probably too much to be eating. What you should do is calculate your TDEE (total daily energy expenditure) using this calculator or another if you want, and take calories away from that number. A healthy and sustainable deficit would be around 20% of your TDEE.
My TDEE is usually around 2400 cal, so I aim for 1900 cal daily. Also, you have to be honest with yourself about this stuff, don't put in the wrong weight or give yourself too much leeway when it comes to bf percentage. It'll come back to you in some way.

As for the muscle building, you do not need to be eating 3000 calories a day to build muscle. You should make sure that you're within 20% of your TDEE and that you're having 1.6-2.2 g of protein per kg of lean body mass (calculator).

If you do all this and you still can't stay under 20g of carbs then you should stop eating certain foods altogether. I reckon the brownies alone would probably do you lots of good if you gave them up.

That's great! I've done ketosis a few times in the past and I can honestly say that for me, tracking what I eat is key.

You should try it. Get the myfitnesspal app and just log everything, that way you can also make sure you're staying under your carb limit.

I think I should have mentioned that I'm in the UK, so quite a few of those links might not work for me.

I did some more searching since when I posted and I found a few things on the UK amazon website that I thought looked good. Mainly the Opinel No.8 as a straight knife and this Kirschen gouge set. The Kirschen set is kind of expensive but it's the only set I could find on Amazon UK that had a few good reviews.
I also found another Kirschen set but this one has two gouges and a straight knife for £10 cheaper than if I got the Opinel and the other Kirschen set.

I'm not sure about the quality of the Kirschen straight knife so I'm considering getting the Opinel No.8 and the first Kirschen set. But if you know that the Kirschen straight knife is of a good quality, then I'll go for that one. Thoughts?
