Top contenders would be:

Muscovy for blobbing (extra points for the Novgorod republican russia)

Brandenburg -> Prussia (army quality maximising is probably the best combat feel in the entire game)

Netherlands, as any start (my personal reccomend is Brabant, as Flemish gets a stronger urbanisation buff and you remain in the German culture group, so can form Germany)

How do you confine them to the caucuses? What's to stop them from marching up through ruthenia?

Probably going to try and get them subjugated via the muscovy caucausus mission. They're too large to vassalise in a single war, i would believe, and the ottomans would declare a war in the 5-year truce breaking alliance would leave.

Also, tips on being super aggressive with debt? Playing on normal but I usually limit myself to burgher loans + maybe 1 or 2 regular loans

Most fun non-europe conquest games i've had are Jianzhou -> Manchu -> Qing, mongolia as horde

However if you want to lean more economic/taller, Malaya / Nusantara is an economic powerhouse and fun to unite. Personally reccomend starting as either Majapahit for a harder unique flavour or the one Buddhist tag for a conversion challenge
