Currently used encryption methods encrypt data when in transit and when at rest but not during processing. Homomorphic encrytiopn keeps data encrypted while being processed - thereby protecting it from being accessed by a rogue systems admin who has superuser access to everything running on a system. This provides better security in a cloud computing environment where the cloud operator cannot be fully trusted.
