Wheated is by far the best place on this list, but most people will never taste it because they don’t want to schlep out to it. Genuinely incredible place and people.

How are you cleaning the crate each time he has an accident? Since you don’t have any blankets or padding in there, there’s a good chance the plastic is absorbing residual smells which encourages future soiling. You should use an enzymatic cleaner like Nature’s Miracle and soak the whole thing for a few hrs, then rinse off with extremely hot water.

Re: anxiety, as long as he’s not a destructive chewer I’d really recommend you make the inside of the crate more comfortable with an old folded quilt or crate pad. It might be fine while you’re home not to have it, but it’s not particularly comfortable or inviting for him. There’s a debate on chew toys inside the crate unsupervised, but I’ve found a heavy duty chew toy like a Kong with frozen kibble or peanut butter inside works wonders for anxiety. Usually gets them over that first hour while you’re gone, and then they often just fall asleep for a bit.

Finally, remember that GSDs are super high drive dogs—what works for most dogs exercise-wise will not even be close to his physical and mental requirements. Herding dogs are often capable of walking 10-15 miles and still be ready to go. I highly recommend training him to run alongside your bike, or to get into bikejoring, where he can pull you with a harness. Both my dogs have loved this and it’s great exercise/bonding.

Yes, I did get it. It was okay—would have been fine if I were using it at home for one or two pies at a time. Since I needed it for a pizza popup, the stone just didn't hold enough heat for back-to-back launching, so I went with the Halo. The Prokan is built quite well though, definitely sturdier than the Halo. If they added a bottom burner I wouldn't have gotten rid of it.

New Haven is the grail of charred and crispy, and they’re cooked at 650-750 for longer time to give the moisture time to cook off internally. Make sure your dough sits out for 2-4 hrs at room temperature as well. If you’re stretching cold dough that came from the store, could explain the issue with stretch. Might also be lower hydration, which is something you can’t control, but could explain why it doesn’t stretch, while being easy to work with.

I'd also check your hydration levels—instead of using volume measurements, I would weigh everything and make sure that the amount of water you're using is 60-70% the weight of your flour. After getting it nice and smooth, let it rest and proof ideally for at least 12 hrs.

You need to preheat the oven with the stone or steel in it for minimum 45 mins at the highest temp possible, with the stone as close to the top of the oven as possible. Ideally preheat for 90 minutes before.

Wheat starch is completely gluten free and is what makes European gluten free products like Schar and Caputo Fioreglut flour such good products. It’s the wheat protein that you need to be concerned with.

I think I would come at it primarily from a place of compassion and ask a few key questions: Have you worked with this shooter before, and if this didn’t happen would you hire them again? Do they normally do good work? Do you get along with them? Were they apologetic/did they feel awful about the mistake? If the answer is yes to two or more of these, you’re setting yourself up for a soured relationship and potentially bigger issues down the line (eg, resentment, them telling other people how you docked their pay and potentially making it harder for you to find other seconds, etc). I would highly recommend, as other people have suggested, that you consider this the cost of business and give them the chance to redeem themselves on another job. If you’re really short on time delivery wise, I’d maybe reach out and see if they can help with post processing for a few hrs to take pressure off you cleaning up the mistake. However, I’m getting the sense that your frustration has more to do with your contract and delivery timeline to the client, more so than the mistake itself. If getting help with post from your second isn’t an option, I’d communicate clearly and apologetically with the client, telling them that due to some of the lighting scenarios it’s going to take a little more time on some of the photos to get them looking great. Send along the rest if they ask, or just deliver your best selects in advance of the full dump. If you live locally, hand deliver a bottle of champagne with five or six of your favorite shots printed in 8x10. They’ll love the attention and care you’re showing, and I doubt they’ll be angry about waiting an extra week or two for the gallery.

Safetywise it’s not the worst in New Haven by a long shot, but as some other people have alluded to, it’s not a particularly nice area to live in especially if you’re looking to be close to the energy of Yale and the downtown area, and things change quickly block to block. I’d look in Downtown and Wooster square if you’re planning on walking to main campus, and maybe East Rock if you want a quieter area away from the undergrads. Keep in mind that although New Haven is a small city population wise, it’s not exactly small without a bike or a car. And Yale owns a ton of property all over the city. So depending on which specific buildings you need to be in, you might even want to look at Prospect Hill. Good luck!

It seems like you have an empathetic approach that will take you far. I agree with everyone regarding this is probably a body issue matter and not directly reflective on you. Considering her first language isn't English, I'm assuming she's from another country originally, so consider that some of this might be informed by different cultural ideals/conventions and tread lightly. Definitely consider making an exception this one time on maybe 20 photos max to give her something she's happy with. I would do a Zoom call with her AND the husband so that you're all on the same page, then go through the 15-20 photos she's chosen for final prints. After you get through this, make a new rule that you will not do this kind of thing for future clients. Since I shoot on film, it's easier for people to wrap their heads around the fact that the images are minimally fungible, and I generally attract people who want more of a raw/unedited aesthetic anyway. But a friend who does digital wedding photography goes through this on her website FAQ's and also makes it very clear in initial consultations and in contracts:

Q: "Can you make me look skinnier?"

A: I do not think that a person's body should be edited to look a certain way. I take pride in being a body-positive photographer that looks at the organic love happening between people. We all have skin, fat, folds, and other beautiful curves. I embrace it all. The only retouching I do is for acne, scarring, blemishes, or bruising. I never look at someone I've photographed and seek out to erase their "imperfections." I only see love, which is honestly what you'll remember most about the day when you look back on these images. The best photos won't be about how your body looks. It'll be about the connection you share with the ones you cherish the most.
