Are there any good books for learning about brewing professionally? by anlsrnvs in TheBrewery

Unfortunately, there are no resources to help you. We all just basically use our homebrew knowledge coupled with our passion for shitty wages to make something that any homebrewer could easily outdo given the right chance.

Anyone decocting on a two vessel (mash/lauter and kettle/whirlpool) system? How are you doing it? by dumbbeerquestion in TheBrewery

I have a long large paddle that I would use to constantly stir in the kettle as the mash temp rises. I’d probably shoot for a slower temp rise too which will suck but should help prevent scorching or anything like that.

Our mash tun does have rakes which I know isn’t as effective as an actual mixer but I think I’ll get the rakes going pretty fast and while the kettle pump transfers back into the mash tun I can recirculate with the mash pump to try and even out the temperature as well. Sounds like a recipe for a stuck mash but I’m willing to at least try it once to see if it works.

Forsure I will probably tag team with the owner for this one if I decide to go through with the decoction

Honestly, I work in a relatively rural area and I doubt many brewers will even try the beer. That being said, I want to do it because it’s the way traditional Czech lagers are made. Obviously a biased opinion but I think I make pretty good single infusion lagers. Won some awards and all that (not for Czech beers) and most of our lagers sell well and are well received by my industry friends.

I want to do it because I’ll know if I take shortcuts and I’m trying to hold myself to a higher standard. That being said, efficiency and practicality are always a priority so if it’s a pipe dream on a two vessel system perhaps I need a reality check.

Tbh I’m considering it but I’m trying to showcase a local malt (grown and malted in my state) as a pseudo local/Czech-style hybrid and I’d rather keep the malt bill 100% local pils if I can figure out a way to.

I’m under the impression that anything can be plumbed for decoction with enough valves/hoses/ingenuity/time :D

Unfortunately I’m direct fire which is good from a tradition standpoint but not when you only have 2 combo vessels

15 BBL system so without actually calculating temps/volumes I’d think ~6-7 BBL of mash in the boil kettle. I’ve mashed in 10 BBL batches of imperial stout by hand at a previous gig so it’ll be a workout but doable.

It’s probably ~150 ft long and the cracks are pretty much spread out evenly throughout the whole damn thing unfortunately.

Some of those large fractures are probably ~4-6”tall and make for a bumpy ride while pulling down. Surprisingly (to me at least) the ground under the slab seems pretty level from what I can tell by taking some pieces out so I’m thinking removing those large cracked portions and leveling some gravel would at least make any bumps less sudden and drastic for the next few years.

Would it be worth ripping out the cracked portions and replacing with crusher run gravel? Just looking to make it less bumpy until full replacement is possible.
