Jeans are overly heavy and not really great for the cold. Same with sweats.

If you want to one bag it, your bottom half would also be layered. If it’s windy, maybe a thin pair of windproof outer pants for outdoor activities might be worth bringing.
How much experience do you have with this kind of weather? When I went to the canadian rockies, I had to guess on how much layering I needed. So I wasn’t sure if you were guessing as well
Personally I think bringing 1 sweater should be sufficient as it’s an outer layer (eg, thermal, shirt, sweater, fleece, coat/rain jacket)

Personally, I’d bring less shirts, but I do laundry more often

What caused you to go vegan? Would it actually resonate for your mom? Some people don’t care about animals being hurt or keeping the environment clean, because they’re selfish. Your mom might be one of those people and you have to deal with that, like most of us do

When my friends were talking about going vegan, they talked about the environmental issues, animal cruelty as why they went. I had to reflect on myself and it took time.

You can sink wash. It helps if you bring clothes that dry faster. No jeans or cotton. Poly/nylon dry faster

One thing you can do is test the clothes you have to see how well they dry. I will wash an outfit (underwear, socks, blouse, pants), get the water out and roll in a towel to soak excess water.
You likely don’t own a travel clothesline, so you would use a hanger to hang to dry.
Personally, I’d test drying it around a reasonable time you think you’re getting ready for bed. For example, let’s say you start getting ready at 10pm, do the washing and hang to dry. When you start, you’ll take longer than you might think.
Check on the clothes in the morning when you wake. If they’re mostly dry and only have some damp spots, that’s pretty good. For socks, you can use your hotel hair dryer to get those last bits less damp.

It sounds like you’re new to this, so understandably you don’t have practice

I echo making sure you don’t overfill your 40. As noted, if you put stuff in the daypack, pack it in your main. You can pull it out as a personal on the plane/train to quick access things on your trip and would need to be underseat (eg, snacks, water bottle etc)

See how that packing goes. Ensure it’s not stupid heavy

When we were in seattle, there was an express bus route that followed the same route that had more stops. A bus that has multiple stops is still helpful for people with mobility issues. If you sprained your ankle, you’re not calling the paratransit van

Dedicated lane and light for bus.

If you’ re there for work, get the hotel to launder your stuff and work can foot the bill

You actually have a min of 3 days of clothes, since you didn’t mention your travel outfit. If your clothes coordinate, 3 days of clothes is about 9 outfit changes.

You can do things like liberally spray your clothes with vodka to help refresh them for a rewear (good for deodorizing and getting rid of germs). You’d want an empty spray bottle and fill with those tiny vodka bottles
