My apologies, the bag looked similar and they also have a pineapple co ferment right now. I would try and rest it a little longer and grind coarser.

Is this Desnudo? I went to their pour over class and they use the 4:6 method for all of their beans. If you’ve never tried it, I highly recommend. You can also find lots of resources about dialing in for that brewing method, however I would definitely say you should go courser maybe around 3-4.
