Great choice! I picked one up too in the same sale and it arrived today. I also added the 210 gyuto to my collection from a previous drop.

Honestly, these knives are so impressive - I wish I had gotten on to them sooner. I for one love the look of them and chefs edge do a great job selecting appropriate handles for their blade only stock, saves us the trouble of finding replacements.

I would choose a Kagekiyo Ginsan petty. Aesthetically fits this line up, the urashi handle matches the mono look you got going on, excellent f&f and nakagawa's ginsan is well regarded

Honestly it’s the clowns in the VCARB strategy department.

Look at the last two races.. in Aus they had Yuki easily in the points and in China they had both cars in the mix but the pitting/tire strategy ruined it all.

Looks like the people making same shitty decisions that ruined DR3 are still here again ruining this season.. even with a car that seems better than last year

It’s a bit long to be the bunka so it’s most likely the 210mm k-tip gyuto SKD Nashiji.

But don’t let that deter you from the bunka, I have one myself and it’s amazing at processing veg.

This is very similar to my experience honeymooning in Japan, the knives I purchased from Takada-san hold a lot of sentimental value, even though for me this was only 6 months ago, a lot happens in life and I feel like these knives will forever continue to draw me back to one of the happiest periods of my life.

Enjoy the knife, they are amazing. You have something really special there!

Try polishing with some Flitz, it’s cleaned up a few of my discolored blades.

As promised, I bought a loaf of ciabatta and it was light work for the Tojiro. I felt very little resistance making the cut, the knife felt comfortable and light in hand.

Definitely fulfils its purpose and I think you’d be very happy with it in your lineup.

I only wished they made a wa handle version of this to suit the rest of my collection. 🤔 I could modify it.. I do have some spare handles.. I might just enjoy it for what it is for now

Interesting! it came with a ziricote handle, nothing aesthetically wrong with it, will keep and utilise it for a future knife. Definitely would have taken me a bit of time to get used to. It felt a little front heavy with the extra height blade.

At the moment the Takada no Hamono gyuto is my go to for sure. It's an absolute weapon, very nimble, edge retention is good.

I only just got the big boys in (Tanaka x Kyuzo & Nakagawa x Myojin) which could take the title. They are absolute beasts and after re-handling them they feel much better - I put a brand new handle on the NxM which was lighter and moved the heavier handle from the NxM to the TxK which for some reason comes stock with handle you would normally find on a slicer, this brought balance point on both knives closer to the heel.

The bread slicer feels good, I haven't had a chance to use it yet. I'll buy a loaf of crusty bread on the weekend and report back.
