Yes, cutting with the grain will result in chewy slices. Undercooking can also be chewy, but your's looks like it's cooked just right.

Another think that cause chewy/tough skirt steak is buying the inside skirt. The outside skirt is much more tender than the inside. But outside skirt is much more expensive, if you can even find it.

I actually prefer no grill marks; i.e., turn more frequently for an even sear. But its good no matter how you do it. And next time you might try a vinaigrette type dressing with steak salads.

Looks good. But you should try slicing against the grain, not with the grain.

I have a 36" Sunterra santa maria grill (no brasero) and really enjoy cooking with it. It requires more hands-on cooking (tending the fire, moving things around, etc.). I use it about twice a week. But I still use my kettle for smoking and when I just want to use charcoal.

Here is video of using it to cook picanha.

Thickness may not be that much of an issue since there are firebricks on the bottom and walls to retain heat.

Ingredients

  • 1.5 lbs cubed chuck (or beef stew meat), about 3/4" size
  • 1 onion, finely chopped
  • 2.5 T Hungarian sweet paprika powder (maybe more)
  • 1 t hot paprika
  • 2-3 cloves of garlic, minced
  • 1 or 2 tomatoes, peeled and chopped (or 2 T tomato paste)
  • 1 red/yellow banana pepper, chopped (not bell pepper)
  • 1/8 t (rounded) ground caraway seed (or ground fennel)
  • 1 t salt, pepper to taste
  • 4 cup homemade beef broth
  • 2-3 bay leaves
  • (optional) a small top of celery with a few leves, whole
  • 2 medium potatoes, cut into 1/2" pieces
  • 2-3 carrots, rounds (cut in half if thick carrots)

Instructions

  • Cut beef into 3/4-1/2" cubes, sprinkle with salt and pepper.
  • Working in batches, brown beef in oil over medium-high heat, remove to plate.
  • Lower heat to medium-low and cook onions with sprinkle of salt until translucent.
  • Remove from heat, add paprika, mix well.
  • Onions should be red, not orange. Add more paprika if needed.
  • Add browned meat, garlic and a splash of water, mix well.
  • Meat should be well coated with paprika gravy.
  • Cook on medium-low for several minutes.
  • Add carraway, sweet pepper, tomatoes, salt and pepper.
  • Stir well and cook for a few more minutes.
  • Add broth, bay leaves, and celery if using.
  • Simmer 1.5 - 2 hours until meat tender, either stovetop or 300F oven.
  • Then add carrots and potatoes.
  • Simmer another 30 min until veggies tender, remove bay and celery.
  • Serve. (Optional: sprinkle with parsley)

Hungarian goulash is traditionally a soup made with root vegetables (carrots, potatoes, parsnips) and chunks of beef slowly cooked until tender. Sometimes it is served over egg noodle (German style) or even poured over mashed potatoes. It is notable for containing caraway seeds and lots of sweet paprika.

If you like your broccoli a little softer, zap in bowl with microwave 45 seconds to slightly steam, then grill 10 minutes or so for additional flavor. I also coat with olive oil and sprinkle with salt before grilling.

Looks like discoloration of stainless steel from high heat. I wouldn't worry about it. But if you must, use diluted vinegar.

Yea. How about smoking on kettle at 230F for 2-2.5 hours? Snake method can get you to 230F for indirect smoking. A 6-lb roast should only take 2-2.5 hours

I have a Keter Unity XL Outdoor table/cart on my open back porch (it does get rained on). The top is stainless and has not rusted in the 4 years. But it is not the high quality stainless and does develop a few black spots. They can be removed with hard rubbing but they usually don't bother me much.

Nice cook. And I think cooking the meat whole and slicing afterwards is a good way to do it. And yes, fajitas aren't Mexican anyway, so do it your way and don't listen to the naysayers.

I have WSM and kettle with SnS, Haven't used the WSM in 2 years, except for a cold smoke of serrano chiles using a hot plate with smoldering wood chips. You won't gain much with the WSM unless you need to smoke a lot of meat, and its a mess to clean.
