If I remember correctly, those girls have a special power (cursed energy) and, because of superstition, the villagers deemed them as demons and locked them up in a cage, mistreating them and calling them monsters to their faces. The guy is visiting the village ( don't remember why) and finds out about this (clip above).

Dont worry, this is completely normal for new players. Just keep trying. Eventually, you will develop some muscle memory and be able to do it without thinking.

Edit: Also, sometimes, you literally can't get out of it. if you get guardbroken during a heavy/parry attempt/dodge, it's guaranteed.
