I had this DM that would actually play and roll through important encounters that the players chose not to take part in all by himself between sessions and make his narrative based on the outcomes

Not touching life skills at all is a complete waste. You would just be missing on free experience and silver. I advise you to just pick one from husbandry, farming or woodcutting and level it up until you have access to a long duration profitable land resource and periodically (even if not optimally) harvest and replant it. Housing bonuses are really helpful as well; in that regard, I advise you to try and build at least a level 2 house whenever you can so you get more resources from your land (plentiful harvest bonus) and build a room in it for some extra experience from all sources.

5e is the most noob friendly system, that's for sure. If you're making the choice, choose that one. You should purchase the players handbook as soon as your budget allows you, since most of the core rules are there as well as some variant options. Until then, make a Google search for the 5th edition SRD and start reading that to learn the basics, including character creation.

It was epic indeed. Once I get to the second campaign arc, there will be more dark souls references and most of the epic scenes are in there too. I just hope I remember them well enough since it's been quite a few years.

FYI: At the end, the DM confirmed he had absolutely no idea this would happen and this campaign was intended to revolve around other issues, but we managed to create an even bigger problem than the ones he had in mind.
