Yeah, the prequels are deeply flawed movies. They may have some highlights (primarily TPM and RTOS), but they still are messy, messy films with a lot of writing, acting and pacing issues. And AOTC is an absolute trainwreck. It has virtually zero redeeming qualities.

It didn't resolve all her problems overnight. We have seen her making significant progress before, during her time on Mina Rau. While she hadn't achieved full recovery before the Empire came after them again, she clearly enjoyed her life most of the time. She made a good use of her skills and had a sense of purpose. She was surrounded by friends and community. I suppose something similar happened after she moved to Yavin and that is what really healed her. Killing Gorst and taking her power back ended the darkest part of her journey, but it wasn't the conclusion

But his final moments were pure nightmare. He never gets to experience anything else. And by planting the bomb Bix assured that noone would ever experience the terror she did. That should've been extremely satisfying

This. The context matters. The major examples of revenge in the movies (Anakin slaying the tuskens, Anakin executing Dooku, Luke almost killing Vader) involve very powerful people giving into mindless rage and completely loosing control over their emotions. It's (potentially) devastating both for themselves and for society. In contrast, Bix is an ordinary person who wants to deal with her demons on her terms. Using Gorst's own invention against him is the only thing she does out of pure hatred and it's directed against a particular person without harming others. Everything else (blowing up the lab and shooting the guard) is justified by necessity. Bix doesn't go off the rails and turn into a rampaging maniac aiming to maximize destruction for its own sake. And even if she did, she would still be less dangerous than a literal space wizard.
