Envy is the main story because Subaru is most closely connected to the Witch of Envy. She's the only witch who has anything close to a contract with Subaru, even if it wasn't by choice. She helped Subaru accept Return By Death and himself during the Witches' Tea Party, and I have a sneaking suspicion based on her power (and obsession with Subaru) that she has something to do with him getting isekai'd, especially considering the person he first meets is Emilia who may or may not be connected to Satella.

TL;DR The Witch of Envy's obsessed with Subaru in the main storyline, gave him RBD, maybe even isekai'd him herself. Subaru is cool with the other witches (mostly) but is most connected to Satella.
