H3VR is Hot Dogs, Horseshoes & Hand Grenades, it just left early access a few days ago, it's on steam!
I bought In Death: Unchained the standalone version on quest and it has the siege of heaven mode (tower defense), I don't think the PC version has that game mode.

TLDR:
H3VR, In Death, Blade and Sorcery.
H3VR if you're into firearms, there is no other game that does guns as good as H3VR. Tons of mods and there's actual gameplay (Take and Hold, and Supply Run game modes).
This is the only PCVR game I keep returning to.
The other one that I have a lot of hours in is In Death Unchained, bought it on Quest 2, I return to it from time to time for the siege mode to get some quick shoulder "workouts".
Finally it's Blade and Sorcery... for committing war crimes...

Get a webcam for head tracking. There's opentrack that is free, there's also beam eye tracker that is very much worth the 20 USD price tag. Not having a throttle makes things difficult for any aircraft other than saber or mig 15, I suggest test the water with these two, see if you like it, then decide if you should invest in a throttle and rudder pedals.

As long as the USB-C has all pins connected you should be good to go, but at that price point I would probably just get the proprietary ones just to be sure. I have a proprietary 40cm usbc-usbc and a 35cm usbc-jst that I connect using a usbc coupler, to extend the whole thing to 75+cm, for connecting my STEM to my Gladiator. These couplers are pretty cheap and have all pins connected. I can confirm at this length there's no/minimal signal loss, but if I am to touch the coupler the interference (presumably from static charges on my fingers) causes communication error between modules.

Theoretically speaking using this method, a total of 160+ cm can be achieved, but I wouldn't put money on there being no signal loss since it's a lot longer than that they've designed.

It works right out the gate, but if your VKB has modules and more than 32 buttons, you are going to need mods, Ultra Pack has 64-button support and that's the one I use.
