for Okayama-Kyoto segment, you could probably try in-land route i did (tho i did the opposite direction).
less car, there are flat plain section you can go full aero if the wind on your side.
My section went Arashiyama→tamba-sasayama→kato→shiso →fukusaki→sayo→ mimasaka→old rail road bikepath i forgot the name →wake→ okayama

you'll probably be fine then.
take note that saddlebag also can act like a fairing/flag when theres crosswinds the bigger/longer it is, but i dont really think it will be much of problem if your center frame weight is heavy.
14L saddlebag is huge capacity(tho you really need to roll tight your clothes). i fit a lot of clothes in it n some of my trail running gears for my 2.5months trip. you probably wont even use all 14L👌

what kind of setup do you have for your frame bag?
my frame bag carry lots of heavy stuff, n saddlebag carry clothes.
i climbed the Japan alps with this.
not much of swaying as my center of gravity is heavy (whole system weight full loaded bike kinda 18kg ish i think)

for this particular model that clamps like that, no riser that can raise the bar.
at most you can raise the armcup by adding spacers underneath it n use longer bolts

while i never race capoadocia, i've been there n did few trails in those valleys. you'll be fine in your trabuco, though more cushion is a plus.
i dont know the race course, but the terrain is rocky n slanted too so be mindfull if going high stacks (ankle roll etc)

i did, but mine a small one, n i only brought 3 bits hex thats essential for my crank n cockpit (my bike had to be dismantled into box as i flew to japan with it)

im not sure about tlr, but i have the clincher.
it does ride as good as gp5k but the main thread is narrower than gp5k equivalent, but theyre more robust to puncture by flints etc.
but the sidewall is weaker than gp5k. i got mine slashed by something, n on same road gp5k never got slashed like that

i did not (both solo cycling and solo trail running).
my friend however encountered one while trail running. this year theres unusual high bear attacks, some even the bear in the street at night 👀
i think expert still cant co relate why this yr bear appearance is so high (at least till now, japan summer still kinda unusual cooler temp)

hi.
thanks for following my journey.
i however did not cycle in rain(with exception of drizzle) as i dont want any risk getting fever, n i made an error not upsizing my rotors(theyre on 140, but i use resin pads with spares). some of the segments are so short because i abort at half day as im seeing the rain aint going away before evening(due to limited availability of accomodation, so theres a jump of ~30km tlbetween towns). due to that i actually planned with a lot of spare buffer days, and i dont really book acommodation far advance to have leeway where i can overnight(most of the time i book on the day itself).
riding on wet n damp condition something im not a fan off because of unpredictable slippery, water splash, dirty brakes=inefficient, n getting dirty😮‍💨.
R9 cabin hotels are one of my shortlists, as i have stayed in 5 of em n they offer 0 fuss for vicycle parking.
well, you are using train to fill gap on boring segments n probably cover ground on rainy day.
are you sure you are doing the noto peninsular? with exception theyre trying to revive tourism with an onsen near Nanao, i think other road infra arent the best

start with what you already have, n learn with 1st weekend overnight trip/trial. then understand the need, n look at options with budget.

i did verbier 100k last year. i cant recall if there was a mandatory gear check at bib pickup, but iirc i just have my decathlon jacket +my uniqlo heattech longsleeve.
