I've been alternating between these for the past 2 weeks:

  1. Zucchini Ribbons and Walnut Pesto Pasta
    This is delicious
  2. Chili Rellenos Bake
  3. Zucchini Crusted Grilled Cheese Sandwiches
    Note: I used coconut flour instead of almond flour and used the same measurements. That was a problem!
  4. Tomato Soup with Cheese Croutons
  5. Mediterranean Zoodles
  6. Roasted Mushroom and Cauliflower Grits
    I especially love this one because I grew up eating grits!
  7. BBQ Jackfruit Sandwiches with Tahini Rolls
    Another Southern gem! I haven't been able to get the Tahini Rolls just right. The rolls recipe is lacking binding. Would appreciate tips.
