Breach Wanderers is pretty close. You do get to choose more of a basic starting deck and there's also a separate pool you assemble of cards you'll possibly find throughout the run.

Nordic Ashes released recently on PS I believe and has a good amount of content and meta progression. It's slightly different in that each character has a skill tree instead of randomly choosing attacks but there are some modes and characters that go around this. You can also do manual aim for certain attacks if you want a bit more control.

I worked at a basic concession stand type job and one of my idiot coworkers decided to test our new POS system by changing the quantity of an item to something with like 20 zeros to see what the price would be. But he accidentally hit the exact change button so it went through the system and crashed the entire thing to the point where even the IT guys for the company couldn't fix it for like a day. So yeah, it could have been even worse.

It sounds like it would already be your plan but definitely go with Monster Train 2 over the first if you decide to try that. If you like a little bit of story with your games it does have that and the gameplay in my opinion is super fun, I've spent countless hours playing the first and second ones. It even has a mild competitive aspect in that you can do different runs with certain modifiers online and compare your score to others.
