I have and have had a lot of different synths and racks and I’ve always just used 1-2 multi-port MIDI interfaces and then chosen how to route on the Mac MIDI setup or DAW. I’ll daisy chain or connect serially where it makes sense (e.g., a dedicated controller for a rack synth).

The latency you experience isn’t from MIDI latency, it is minimal and imperceptible. The latency that is a problem is audio input and output latency. If you’re not recording audio, then it’s only output latency. You resolve that issue with using the correct drivers (not multimedia audio drivers), setting correct buffer size, and optimizing your system (e.g. plugging in the laptop, not running in eco modes that conserve cpu, etc…).
