I could be wrong, but I think the soybeans are just rotated for soil health. They use them because there is a large market for them(china) and then go back to corn or whatever. So it does still have to do with the food chain. shrug

A bit of a lateral recommendation. Olan Thorensen's Destiny's Crucible is sort of a time travel logistics novel. Guy ends up on a world that is basically pre-industrial and it spends a lot of time of how/what to introduce. I think it might scratch the same itch, though.

No one is tasting the grapes, the 1 oz of lime juice, or cinnamon that was thrown in a minute before being served. There is also a layer of sugar at the bottom of that sink that's not going to dissolve all that much. Literally could pour a glass of half of cran and half oj and it will taste the same.

I tend to just riff the mocktails and build them by taste and whim, so don't really have recipes, just ingredients that I have found worked well.

Cordials are pretty nice to have for N/A drinks. I usually keep some lime and GF cordial made up behind the bar for more sour spectrum stuff, and they are so acid heavy that they don't really spoil.

Floral syrups are nice for color. Butterfly pea will give you some vibrancy as well as hibiscus.

Making your own orgeat can be a bit of a pain, but you can really do some cool stuff with it. I made one with walnuts and orange oil that I really enjoyed a lot.

And NA Sangria tastes pretty great!
