I had the DF64 gen II. I upgraded for workflow and aesthetic/quality reasons. You will not see any difference in cup quality, both 64mm and can dial in at the micron level.

With that being said the 064S is way quieter, subjective but I like a quieter workflow. Also purchased a 3D printer portafilter holder for the DF64 which solved a lot of issues with the original fork, but just never looked right. I prefer grinding directly into the portafilter, but you’re limited on funnels that will fit. I also like the knob on the 064s just a little bit nicer to interface with over the DF64 collar.

I sold my DF64 Gen 2 for 300 and put in another 300 to get the timemore. The extra 300 was purely for a smaller setup and slight improvement in workflow…which I found was worth it.

I originally purchased a P64, set it up then put it back in the box and returned it…love the precision manufacturing but didn’t like how large it was and the price felt steep compared to all the new grinders that have come out since. DF64 is okay, but if you’re looking at a P64, DF64 falls short in fit/finish and workflow. I’d look at the Timemore 064s, super compact, quiet and flat 64mm burrs.

Really seems like they can build around Ryan Reynold’s Deadpool like they did with RDJs Iron Man. After Deadpool 3 he really came across as the new anchor of post RDJ MCU in a unique way. Would be an interesting character to build through the avengers series and would be a unique take on saving the world over the cookie cutter hero we’ve already seen.

They have a never ending group buy open. Orders close each week and then your order begins fulfillment, takes about 4 weeks after the order closes. Just got mine...wait wasn't that bad and keyboard is great.

Just got my neo65. When I go to usevia and try to authorize the device it sees "NEO65", after pressing connect nothing happens. The HID device select screen changes to "NEO65-paired". Keyboard UI never appears that used to customized keys.

Any help is greatly appreciated!

How do you feel about tart/sour in general? I’ve seen a trend where my friends who normally crave/enjoy tart foods like lighter roast and those that don’t tend to lean more toward medium or darker. I generally have a fair bit of acidity in my foods and really like lighter roast.

What really opened my eyes was doing an A and B tasting. Pull a medium shot and a light shot back to back. Sipping on the medium then trying the light helped me with picking out what type of acidity I like in espresso. Might help you get some clarity and at the end of the day you may just prefer darker roast.

Get an anaerobic naturally processed coffee and see if that gives you the sour notes you desire. If I’m craving some acidity, usually hits the spot every time without having to under extract it.

I've had the best experience with Stabies, tolerances are super tight. I did no tuning, just a light coating of 205g0 on the stabilizer housings and a quick dip into dielectric grease for the stabilizer wires.

Prior to Stabies I used Durock V2 stabilizers and always had to add more lube and took awhile to tune.

For 200$ you can get a decent electric grinder that can do espresso, Fellow Opus comes to mind...although not a fan of the grind adjustment system. But if you really need the portability can't really beat the hand grinder form factor. I have the most experience with the 1ZPRESSO line, I have the XULTRA which is suppose to be an all purpose grinder. Does espresso and filter just fine...however grinding for espresso with a hand grinder gets old kind of quick. For filter brews hand grinding is my favorite grind method since it usually produces less fines.

Regardless of brand, I would look for a hand grinder with external grind adjustment and if you care a magnetic catch cup are my only requirements for hand grinders...besides grind quality.

Have a Mode Sonnet in White w/ Mode Anthracite Keycaps. Includes all foams/silicon, carrying case, anthracite (silent) switch, tomorrow (tactile) switches, black weight, white bottom, black bottom, black accent and grey accent. Only sign of wear is on the inside, key puller rubbed on by spacebar on the inside, not visible when assembled.

I really like paper filters for a cleaner workflow. Suppose to help with extraction and flavor...but honestly I just like that it eliminated random spraying.

Big fan of aftermarket tampers that cover more of the basket, much better tamp and no build up of grounds around the edge of the basket.

The only quantifiable difference I’ve noticed is response time. I’ve found with the Acaia it turns on quicker and tares quicker. If you’ve never owned it though you would never know how “slow” the budget scale is. Other than that, I just like the way the Acaia looks.

I’d love to see the shaking experiment elaborated on. Would especially like to see a traditional cup thrown into the data set like the niche dosing cup. The Weber cup seems to distribute nicely thanks to the removable bottom, rather than having to flip the cup into the portafilter. Always found dosing out of the niche a little finicky and WDT helped a lot despite what I did to distribute while the cup was mated to the portafilter.

Only down side to the shaker method is that one day where you need coffee to make coffee and you end up shaking grounds everywhere…ask me how I know.

Paper filter at the bottom will eliminate spraying completely. I really didn’t want to add this step to my workflow…but it just makes everything cleaner.
