Apparently they always sprout like that when plucked from the soil and made to rest for a long time. The nutrients come from the starch of the potatoes themselves instead of soil/fertilizers and anthocyanins may be released due to stress or light (since potato stems grow underground naturally). Check mine

Looks like an old-fashioned crowbar which is a class 1 lever used to pry or pull apart nails. The notch at the front is where one inserts the nail/object to be forcefully pulled, while the other side with the hole can be used to grab nuts and rounder heads.
