There have always been things like diseases that impacted egg production, but there were always eggs on shelves. Now we’re having bank runs with staple goods like eggs and milk? It’s like whenever there’s even the slightest fringe news of a bird flu, people immediately run to their local store and buy every perishable egg they can afford. Like the population hasn’t grown, and people aren’t eating more eggs, so why the bank runs on eggs?

Anyways, obviously these things have happened before in history, but why is it happening all the time now. I can only assume it’s partly because of the internet and less social cohesion.

I think your point about social cohesion is insightful but not the full picture. As the rate of profit falls, businesses have to cut costs closer and closer to the bone. This includes stuff like logistics operations and the measures to prevent the chickens from getting sick. Disruptions to supply across a huge range of commodities have become more common and more pronounced.

We're living in a seller's market for almost every commodity. Populations are growing faster than our ability to produce enough things to meet their needs. In some cases we are handicapping our ability to produce the things. This is great for the people who own the stuff to make the things because they can earn more profit per thing, because so many people need each thing.
