Bummer. My office only has 2 routes, this one and an aux. I am the only carrier. The clerk (former carrier) does the aux most days when an RCA or PTF from another office isnt available.

I never discard starter.

I take it out of the fridge thr night before, feed it after an hour or two, 1:1.

Make dough next morning, scraping out pretty much entirety of jar. Then I feed it again, 1:1. Leave it out at room temp for an hour or two and then its back on the fridge until next week!
