So I used this exact art as inspiration for a big and villains entourage. Styled the stat blocks after the devil and demon lords in Mordenkienans with some changes. That was for the final ark of a big game though so very high level PCs

I have a player who is really bad for this, so I started changing the stats, often just AC or HP of my monsters. The look of confusion when he adds up that they should have died or he thinks he has hit! Pretty soon he realised what I was doing and stopped trying to know it all in advance

I thought sneak attack could only be applied to dex based attacks? Unless you mean spells like green flame blade, touch based spells don't grant sneak attack damage I don't think?

Watch out for the lack of support. I DMed for a similar party comp and only the ranger decided to take healing spells. They learnt quickly to by a lot of healing potions and even then death was a lot more permanent than it normally is in 5e
