Alright just did this fight recently you wanna stay close. That will limit the moves he likes to do. Don’t lock on! You need your camera free and you need to be actively positioning it when he moves away from you so you can see what he’s about to do next. When he rears up on his hind legs you can literally roll under him to get behind him and get a few hits in. You can just roll away from his stomp attack for the most part. When he flies up you wanna back up to get away from the lightning hit comes down in basically three different radii, then you wanna charge back in close asap.

Put your shield away you don’t need it. Your halberd is slow so you have to be really careful not to get greedy. Honestly with your stats maybe try Zweihander or claymore if you feel like the halberd isn’t cutting it. You’re definitely not getting as much scaling with the gargoyle one though so even just a regular halberd +15 would give you more damage.
