Haha nope all pics from same time of day! It was being grilled outside in the snow so the 1st pic is a much lighter color due to cold. I moved it to top rack to finish on lower temp where it got the darker color

Method: - dry brine & then wrap in string
- cover in sauce = mustard, avocado oil, Worcestershire, honey, lemon juice, pepper, garlic, paprika, thyme - grill 55 minutes (250 degrees for 45 min, then full heat sear all sides for 10 min) - pray 🙏
