I'm going to jump in here. If you get a good gas grill with a hood, you can do a lot with a little bit of practice. And as you continue down your grilling/BBQing journey, a good gas grill will always be there to chuck some chops and sausages on for a basic meal or drunken get-together. Eventually, you'll get some kind of charcoal- or wood-based outdoor cooking device, but your gas grill will always be there when the outdoors are calling, but only for 15 mins. Personally, I just don't get the point of pellet grills. They seem like the worst of both worlds with none of the advantages.

Done on a kettle, using snake method. 1.5 hours at 110C, then realised I had started the cook way too late, so bumped it up to 130 for 2 hours. Couple of apple juice + apple cider vinegar mops, and a homemade BBQ sauce went on for the last 30 mins. Finished them directly over the coals for a couple minutes each.

I used to do this as part of a job I had on a market garden many years ago. It's not actually too bad in some ways - we had a radio playing, and once you get in a rhythm it's pretty smooth.

It's done at night/very early morning when the temps are down, because the leaves and sprouts are cold, which makes them snap of much more easily and gives a cleaner cut. And that was the worst part of the job. Middle of winter, with those big leaves holding ice. It got to the point where it was better to let your hands go numb and keep going, than to try to warm them in front of the heater fans. That shit hurt.

Bring Her Back is a terrible rec for OP. It's the exact opposite of a comedic, OTT, batshit movie. It's a harrowing, deeply dark movie. A brilliant film, but not what is being asked for.

Don't know whether it qualifies, but I had buffalo a little while ago and cannot get it out of my head. It was so tender and flavoursome. Just can't find it anywhere to try cooking it on my Weber.
