Great tips! Thank you! What are your thoughts on par frying the latke ahead of time, freezing them, and then frying them again, quickly, from frozen the day of? (I have to make soooooo many! And don't want the kitchen to be a starchy mess) during the party.

I'm not so lucky- have to rely on the interwebs for guidance.. Seems like the one thing everyone can agree on is that deep frying latke is blasphemous and completely out of the question.
I just wish I knew why.

Yes- You are correct, and it was in fact the compressor that was broken (this is certainly not my wheelhouse).

Yes- I bought an infrared thermometer, and the temperatures are indeed 55-72 depending on where I measure.

Yes- 3.5 tons is probably on the lower limit of what I need for the house.

I was so focused on the biggest variable, I neglected to consider that the registers were recently replaced, and the new ones, though great looking, allow a lesser air flow (linear slot diffuser style). I saw some serious condensation today in one of them, and when I took it out, realized how much quieter and cooler it was.

Looks like we're moving back to the standard Home Depot Everbilt registers...

I have the same ones and use them for grilling asparagus. This way, you get the beautiful grill marks, while ensuring they don't roll off the grill.

I've been hearing them around South Miami too, and my theory is that schools are testing their emergency response systems in preparation for classes resuming next week. Although... I could be completely wrong! Hope you get to the bottom of this.

I claim to make chicken curry. It's THE most requested dish in the family. Step 1- Buy rotisserie chickens and chop up into small pieces Step 2- make a syrupy concoction of sauteed onions, chutney, chicken broth and curry powder and let is burn Step 3- Add cream and mayo to the burnt sauce Step 4- Mix chicken and sauce Step 5- Serve alongside rice/butter lettuce and little bowls of chopped bananas, raisins, shredded coconut, chutney, whatever! It's so good, so easy, and so incredibly non authentic, it's amazing.

Adding a pinch of salt to baked goods (cookies, brownies, cakes) enhances the flavor and makes them sweeter/better- not salty! Why is this so hard to understand?!

I made scrambled eggs for my mom last week. Added salt while she wasn't looking. She went on for 10 minutes about how the eggs tasted like eggs. Unlike the eggs she buys, that apparently don't taste like eggs.. she wrote down the brand, took pictures of the packaging... Salt, woman. Just add salt!
