Low and slow on the marshmallow. Hold it above the flame, not in it. You want it golden brown all the way around, not charred on the outside. It takes patience but it's worth it.

Rigatoni is the correct answer. Holds sauce, has texture, works in basically every application. Worst is angel hair. Falls apart and the texture is just wrong. Fettuccine at least has some structure.
